Here, Sabrina and her family care for about 600 olive trees, many of which have stood through generations, producing oil that reflects the soul of this land.
The olives are a classic Tuscan mix: Frantoio, Leccino, Moraiolo, and Pendolino. Fruity and vibrant, with pepper and brightness that dance across the palate. Each variety brings its own character. Together, they create the balanced, expressive oil that Tuscany is famous for.
The year begins in winter, when the trees rest. Pruning happens between January and May, focusing energy into new buds and future olives. Spring arrives, blooms open, and tiny fruit forms. Through summer, the family tends the land, keeps the soil healthy, and watches the olives swell with sunlight and minerals from the soil.
Harvest arrives in October and November, when the olives begin to shift from green to glossy black. Every olive is picked by hand, then rushed to the mill in Montepulciano and cold-pressed within 24 hours. That speed matters. It protects flavor, aroma, and natural nutrients.
