Enter the La Nascosta Chard’O. On the table with the cornbread is the Iviti Toscana Bianco. Crisp, aromatic, and slightly textured, this wine is an ideal match for sweet, buttery cornbread. Its bright acidity cleanses the palate so the richness of the corn does not overwhelm, while subtle floral and citrus notes match the bread’s sweetness. The Luccicante Vermentino from Cà du Ferrà brings crispness, vibrant acidity, and a coastal minerality shaped by its seaside Ligurian terroir. Its bright citrus and Mediterranean herb notes enhance the rosemary/sage, while the mineral backbone and lively acid cut through the buttery sweetness and caramelized edges of the potatoes, keeping the pairing fresh and balanced.

Seasonal Roasted Root Vegetables (Carrots, Parsnips, Butternut Squash)

Roasted root vegetables bring deep, earthy sweetness to the Thanksgiving table. These vegetable develop a beautiful caramelization and rich, rustic flavors as they roast, making them hearty but not heavy. Pairing them can be tricky. It’s hard to predict how you are serving green beans this Thanksgiving, whether as a rich and savory casserole or simply blanched with some nuts and a squeeze of citrus. One thing’s for sure: green beans will probably make an appearance on your table. For that, a Riesling is a lovely match.

For a fun hypothetical approach, let’s say you are making a classic Southern-style green bean casserole. For that, we turn to Hochklaus Orange Riesling. With its extended skin contact and barrel aging, it brings beautiful texture and complexity to the dish. The wine’s aromatic notes of yellow peach, pineapple, and a hint of candied orange zest complement the richness of the cream and the crispy onion topping, while its fine tannins, juicy acidity, and salty minerality brighten the green beans and lift the savory flavors. This pairing keeps each bite lively and balanced, turning a familiar dish into a new experience.

Making its grand entrance, Iviti’s Late Harvest is crafted from Grechetto grapes left longer on the vine to naturally concentrate sugars and intensify flavor. Joining the table is Cà du Ferrà L’Intraprendente, a naturally sweet Passito from Bonassola. Passito is a style of wine made from grapes that are dried after harvest, concentrating their sugars and flavors. Cà du Ferrà follows this tradition by drying their grapes for three months before manual destemming. The wine’s coastal minerality and subtle herbaceous notes balance the richness of the pie, while its sweetness harmonizes perfectly with the pumpkin and warm, nutty spices, enhancing the cinnamon, nutmeg, and clove in every bite.

Pecan pie is the ultimate indulgence, rich, sticky, and nutty, with caramelized pecans nestled in a buttery, tender crust. Each bite is sweet, crunchy, and deeply satisfying.

Claiming its rightful crown at the end of the feast is Contucci Vin Santo di Montepulciano, a noble dessert wine crafted with care and tradition. The grapes are hung in the cellar to dry on straw mats for three months, concentrating their sugars and flavors, before being aged slowly in small caratelli barrels. This method gives the wine its characteristic oxidative notes of caramel, toffee, coffee, and toasted nuts, perfectly amplifying the toasted pecans and buttery richness of the pie. Contucci Vin Santo elevates every bite of dessert into a truly memorable pairing.
